Strawberry Swirl Cheesecake

Ingredients 

 

Cheesecake:

  • 16 oz low fat/fat free cream cheese
  • 7 floz light sour cream
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 tablespoon cornflour
  • 1 cup sugar
  • 1 teaspoon orange zest

Strawberry Conserve:

  • 1 cup fresh ripe strawberries chopped
  • 1/2 cup sugar
  • 1/4 cup water
  • 2 teaspoons vanilla extract
  • 1/2 cup extra strawberries for topping.

Instructions 

  • Preheat oven to 175°C (350°F). Lightly grease a shallow, medium-sized round springform cake pan, then dust it with a small amount of flour to coat the entire surface. Shake out any excess flour and set the prepared pan aside.

Strawberry Conserve:

  • Combine the chopped strawberries, sugar, water, and vanilla extract in a small saucepan. Place it over medium heat. Bring the mixture to a low simmer and allow it to gently simmer for approximately 15 minutes, or until the liquid has reduced significantly into a thick, jam-like consistency and the strawberries are wonderfully soft.

Cheesecake:

  • In a large mixing bowl, combine the softened cream cheese, light sour cream, eggs, vanilla extract, cornflour, sugar (or your chosen sweetener), and orange zest. Beat these ingredients together on a low speed until the mixture is completely smooth and thoroughly combined, ensuring no lumps remain.
  • Carefully pour the cheesecake batter into your prepared springform pan. Once at room temperature, place it into the fridge to chill for at least 1 hour, or ideally, overnight, for the best texture and flavor development.
  • Before serving, generously top the chilled cheesecake with the remaining strawberry conserve and an abundance of fresh, extra strawberries for a delightful garnish.
