Ingredients
Taco Mince:

- 2 large ripe tomatoes , chopped
- 16 oz extra lean ground beef mince prepared
- 1 packet Old El Paso Taco Seasoning Mix
- 1/4 cup water
Grilled Cheese:
- 8 slices bread of choice
- 1 large avocado smashed
- 1 tablespoon lemon juice optional
- 1 pinch salt to season
- 1/2 cup spinach leaves
- 1 cup prepared Taco mince divided
- 2 large ripe tomatoes chopped
- 1/2 cup low fat/light mozzarella cheese or cheddar
- 1/4 cup Taco tomato salsa
- 1/4 cup light/low fat sour cream OR natural greek yoghurt optional
Instructions

In a large nonstick pan, fry onion until transparent with cooking oil spray. Add tomatoes and cook until soft. Add mince and cook while breaking up with a wooden spoon. Add the seasoning and water and cook Taco mince to packet instructions. Set aside.
