  • 4 tablespoons flour (all purpose or plain)
  • 4 tablespoons parmesan cheese finely grated, fresh
  • 2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper cracked

For The Sauce:

  • 5 tablespoons olive oil
  • 2 tablespoons butter
  • 1 small onion finely chopped
  • 1 whole head of garlic peeled and divided into 10-12 cloves
  • 1 1/4 cup chicken broth (stock)
  • 1 1/4 cup heavy cream half and half (or evaporated milk)
  • 1/2 cup parmesan cheese finely grated, fresh
  • 2 tablespoons fresh parsley to serve

Instructions 

  • Begin by seasoning the chicken breasts generously with salt, garlic powder, and black pepper.
  • In a shallow bowl, whisk together the flour and finely grated parmesan cheese. Dredge each seasoned chicken breast in this flour mixture, ensuring it’s evenly coated, then gently shake off any excess flour.
  • Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet or frying pan over medium-high heat. Swirl the pan to evenly coat the bottom with the melted butter and oil. 
  • Carefully place 2-3 chicken breasts into the hot skillet (avoid overcrowding). Fry them until they are beautifully golden brown on each side and fully cooked through with no pink remaining in the center. This usually takes about 4-5 minutes per side, depending on the thickness of your chicken fillets. Once cooked, transfer the chicken to a warm plate and set aside.
