These pancakes are absolutely divine dusted with a delicate layer of icing sugar for that extra touch of sweetness and visual appeal. And, of course, they come with an invitation for extra chocolate chips. Why? Because, as we playfully tell ourselves, chocolate comes from a plant, and that makes it practically a health food… right?

Why Greek Yogurt Makes These Pancakes Unforgettable

The star ingredient in this recipe is undoubtedly Greek yogurt, and it plays a crucial role beyond just adding a “healthier” label. Greek yogurt contributes significantly to the incredible texture and flavor profile of these pancakes. Its inherent creaminess and slight tanginess tenderize the batter, resulting in an exceptionally fluffy and moist pancake that practically melts in your mouth. Unlike traditional milk, yogurt’s thicker consistency and acidity react beautifully with the leavening agents, giving these pancakes their signature rise and airy texture.

Beyond texture, Greek yogurt is a nutritional powerhouse. It’s packed with protein, making these pancakes a more satisfying and energy-boosting breakfast option. It also provides calcium and beneficial probiotics, contributing to overall gut health. So, when we say “healthier-ish,” we mean it! You’re not just enjoying a delicious treat; you’re also fueling your body with good-for-you ingredients.

The Perfect Blend: Berries and Chocolate

What’s better than a fluffy pancake? A fluffy pancake bursting with the vibrant flavors of fresh berries and the comforting sweetness of melted chocolate. The mixed berries – a delightful combination of sweet blueberries and slightly tart raspberries – create pockets of fruity explosion in every bite. Their juiciness keeps the pancakes moist and adds a beautiful contrast to the rich batter. Paired with dark or semi-sweet chocolate chips, which soften and melt into gooey perfection as the pancakes cook, you get a truly irresistible flavor combination that appeals to everyone.

This balance of sweet and tangy, fruity and chocolatey, is what elevates these pancakes from good to absolutely phenomenal. It’s a breakfast that feels luxurious yet is surprisingly simple to make.

Capturing the Deliciousness (And Devouring It!)

I truly adore my macro lens. It’s my firm and strong belief that seeing pancakes up close, right in our faces, is infinitely better than distant shots where you need a magnifying glass to truly appreciate what you’re looking at. And the absolute best part of food blogging, beyond sharing delicious recipes? Eating it! Yep, that’s a *huge* bonus we food creators get to enjoy. Who wants some?

For an extra touch of gourmet sweetness, I drizzled these magnificent stacks with some golden honey instead of the usual maple syrup, and oh lordy… it was truly a “hello world!” moment. The subtle floral notes of the honey perfectly complemented the tang of the Greek yogurt and the sweetness of the berries and chocolate. It’s a combination you simply must try!

There were so many delightful blueberries and raspberries shining through each pancake. And not a peep was heard from my kids while they quietly and enthusiastically demolished their stacks. That, my friends, is the ultimate testament to a truly successful breakfast recipe!

Tips for Fluffy Pancake Perfection

Achieving truly fluffy pancakes comes down to a few key techniques. First, avoid overmixing the batter. A few lumps are perfectly fine and even desirable; overmixing develops the gluten, leading to tougher pancakes. Second, ensure your pan or griddle is at the right temperature – medium heat is usually perfect. If it’s too hot, the outside will burn before the inside cooks; too cool, and they won’t brown properly or develop that beautiful rise. A light spray of cooking oil and spreading it evenly helps with even cooking.

One important note for this recipe: due to their thickness and the Greek yogurt, these pancakes might not form many visible bubbles on top like thinner batters. So, instead of waiting for bubbles, keep an eye on the underside. Once it’s golden brown and the edges look set, it’s time to flip! This usually takes about 3-4 minutes per side. Cook for an additional 2-3 minutes on the second side, or until thoroughly cooked through. Trust your spatula and your eyes!

Fluffy Greek Yoghurt and Mixed Berry Choc Chip Pancakes

Perfectly fluffy and healthier-ish Greek Yoghurt Pancakes, full of juicy berries and melty chocolate chips.

Ingredients

  • 2 cups organic white self raising flour option for light spelt flour, whole wheat or all purpose flour
  • 2 teaspoons baking powder – 1 tablespoon baking powder if using the other flour options
  • 2 tablespoons raw sugar
  • 1/4 teaspoon salt 1/2 teaspoon if using other flours
  • 2 large eggs
  • 2 1/2 tablespoons coconut oil melted
  • 1 tablespoon pure vanilla extract
  • 1 cup plain non-fat Greek yogurt
  • 1 cup unsweetened almond milk or milk of choice
  • 1/3 cup fresh raspberries or frozen
  • 1/3 cup fresh blueberries or frozen
  • 1/4 cup dark/semi-sweet chocolate chips

Instructions

  • Combine together all dry ingredients into a large mixing bowl and whisk thoroughly until well combined. Set aside.
  • In a separate, smaller bowl, whisk together the eggs, melted coconut oil, pure vanilla extract, and Greek yogurt until the mixture is beautifully creamy and smooth. Gradually add the almond milk (or your milk of choice) and continue to mix until all wet ingredients are fully combined.
  • Gently pour the wet yogurt mixture over the dry ingredients. With a wooden spoon or spatula, stir slowly and carefully until the batter is just combined. It’s crucial not to overmix here; the batter will not be perfectly smooth, and a few lumps are absolutely fine – they actually contribute to the fluffy texture! Lastly, gently fold in the fresh (or frozen) raspberries and blueberries, along with the chocolate chips, being careful not to break the delicate berries.
  • Heat a non-stick pan or griddle over medium heat. Lightly spray with cooking oil spray and spread it out evenly with your spatula. Using a ladle or a 1/4 cup measuring cup, pour the pancake batter onto the hot pan to form individual pancakes. If desired, you can gently spread the batter out a little with the back of your spoon to shape them perfectly.
  • Cook the pancakes for approximately 3-4 minutes on the first side. Since these thicker pancakes might not form many bubbles, check the underside to ensure it’s beautifully golden brown before flipping. Once golden, carefully flip each pancake and cook for another 2-3 minutes, or until they are thoroughly cooked through and golden on both sides. Repeat this process with the remaining batter.
  • To serve these delightful pancakes, dust them generously with a little icing sugar for that elegant finish. Stack them high and top with an abundance of extra fresh berries for a vibrant and delicious presentation! A drizzle of honey or maple syrup is also highly recommended.

Notes

Due to the thick consistency of these pancakes, visible bubbles may not form on the surface. It is essential to check the underside for a golden brown color before flipping to ensure they are properly cooked.
