My Undeniable Churro Obsession
It’s true, I confess to a profound, and perhaps not-so-mild, churro obsession. Over the years, this blog has featured a delightful array of churro-inspired creations, each one more tempting than the last. We’ve journeyed through the sweet landscape of Churro skillet cookies, savored the flaky goodness of Churro empanadas, indulged in the molten centers of Churro lava cakes, and even delighted in those irresistible Churro donut holes.

So, how did these particular Churro French Toast Ice Cream Sandwiches come into existence? The answer is simple: my unwavering love for all things churro. While many might reach for traditional cookies or waffles, I wanted to combine the best of both worlds – the comforting warmth and spice of churros with the cool creaminess of ice cream, all in a convenient, easy-to-make breakfast or dessert format. This recipe is a testament to that delightful (and admittedly, persistent) obsession.
Crafting Your Homemade Churro French Toast Ice Cream Sandwich: A Simple Guide
Creating these heavenly treats is surprisingly straightforward. The secret lies in a few key steps that transform ordinary French toast into a churro-inspired delight. After poring over countless churro ice cream inspirations, I knew the foundation needed to be a round, perfectly dippable bread, leading me to the humble yet versatile baguette.
Choosing and Preparing Your Bread
- Begin with a sturdy, round French baguette. Slice it into generously thick 1/2-inch rounds. This specific thickness is crucial to mimic that beloved ‘churro-shaped disc’ – providing a substantial base for your sandwich, ensuring it holds up beautifully when filled.
The Flavorful Egg Wash Immersion
- Next, prepare your aromatic egg wash. This isn’t just any egg wash; it’s a concoction brimming with classic churro flavors. Whisk together eggs, milk, a touch of sugar (optional, for extra sweetness), a generous amount of ground cinnamon, and a splash of pure vanilla extract. These ingredients infuse the bread with that unmistakable churro essence right from the start. Dip each bread slice into this fragrant mixture, rotating quickly to ensure even saturation without making them soggy.
Pan-Frying to Golden Perfection
- Now for the magic on the stovetop! Heat a non-stick pan or skillet with a dollop of butter. Why butter? Because, well, butter makes everything better, especially French toast. It contributes to that irresistible crispy, golden-brown crust and rich flavor. Pan-fry your egg-soaked bread slices in batches over low-medium heat until each side is beautifully golden and slightly crisp. This gentle frying ensures the interior is tender while the exterior develops that perfect churro-like texture.

The Essential Cinnamon Sugar Coating and Filling Choices
Immediately after frying, while the French toast slices are still warm, generously coat them in a mixture of cinnamon sugar. This sweet, aromatic crunch is what truly elevates them to “churro” status, creating an irresistible texture and flavor profile that crackles with every bite. The warmth of the toast helps the sugar adhere beautifully, creating a perfect crust.
Now comes the truly fun part: selecting your filling! Here, the possibilities are endless and entirely up to your personal taste and dietary preferences. You can choose a classic, rich ice cream in any flavor that tickles your fancy – vanilla, chocolate, salted caramel, or even a fun cookie dough. Alternatively, for a lighter option or if you’re counting points or calories, a scoop of creamy frozen yogurt works wonderfully, offering a delightful tang that complements the sweet French toast. Don’t be afraid to experiment with different combinations to find your perfect match!

Assembling and Enjoying Your Churro Ice Cream Masterpiece
Once your churro French toast slices have slightly cooled, it’s time for the grand assembly. Take one delightful, cinnamon-sugared toast, top it generously with a scoop of your chosen ice cream or frozen yogurt, and then gently place another toast on top. A soft press down will help the toast adhere to the creamy filling, creating a perfect sandwich. The contrast of the warm, crispy French toast and the cold, melting ice cream is absolutely divine. Serve these masterpieces immediately to savor the incredible blend of textures and temperatures before the ice cream turns into a glorious puddle of cinnamon sugar heaven. You’re welcome, in advance!
Elevate Your Experience: Serving Suggestions
While these Churro French Toast Ice Cream Sandwiches are undeniably spectacular on their own, you can elevate the experience even further with a thoughtful pairing. For an impressive touch, serve them alongside a chilled glass of creamy eggnog. The warm spices of the churros find a perfect harmony with the rich sweetness and festive notes of the eggnog, creating a match made in dessert paradise. Alternatively, consider a drizzle of warm caramel sauce, a sprinkle of chopped nuts, or a dollop of fresh whipped cream for an extra layer of indulgence. A hot cup of coffee or a glass of cold milk also makes a classic and comforting accompaniment.

ORIGINAL RECIPE AND IDEA BY Karina, CAFE DELITES!
Ingredients
For the Churro French Toasts:
- 2 large eggs
- 1/4 cup milk
- 1 tablespoon granulated sugar or natural granulated sweetener – OPTIONAL
- 1/2 teaspoon ground cinnamon
- 1 teaspoon pure vanilla extract
- 1/2 french baguette sliced into 1cm/half inch rounds to make 12 slices
- 2 tablespoons butter divided
For the Coating & Assembly:
- 1/4 cup cinnamon sugar or 1/4 cup granulated sugar + 1 teaspoon ground cinnamon
- Additional: your favorite ice cream or frozen yogurt
Instructions
-
In a wide, shallow bowl, whisk together the eggs, milk, optional sugar/sweetener, ground cinnamon, and vanilla extract until well combined. Dip each slice of baguette into the egg wash, turning quickly to ensure it’s evenly coated without becoming overly saturated and soggy.
-
Prepare a separate shallow bowl with your cinnamon sugar mixture (or granulated sugar combined with ground cinnamon for coating). Heat a non-stick pan or skillet over low-medium heat with 1/2 tablespoon of butter. Once hot, place 4-5 slices of the egg-soaked bread into the pan and fry on each side until golden brown and crispy. Immediately after frying, use tongs to dip each warm slice into the cinnamon sugar mixture, ensuring it’s evenly coated all around. Repeat this process with the remaining butter and bread slices, frying in batches and coating each toast while still warm.
-
Allow the coated French toasts to cool slightly for a minute or two – they should still be warm but easy to handle. Take one churro toast, top it with a generous scoop of your preferred ice cream or frozen yogurt, and then gently place another toast on top. Lightly press down to adhere the toast to the creamy filling. Serve your Churro French Toast Ice Cream Sandwiches immediately and enjoy!
