Ingredients 

 

Lasagna:

  • 2 teaspoons olive oil
  • 1 pound lean ground beef mince
  • 1 large onion diced
  • 1 tablespoon garlic minced, or more to taste
  • 1 large carrot peeled and chopped
  • 1 large zucchini chopped
  • 2 cups chicken stock or broth
  • 14 oz tomato sauce Passata
  • 14 oz crushed tomatoes canned
  • 2 cups water
  • 4 tablespoons tomato paste
  • 2 tablespoons fresh parsley
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • 1 beef bouillon cube crushed
  • 1 pinch salt to taste
  • 1 pinch cracked pepper to taste
  • 8 large lasagna sheets broken into bite size pieces
  • 1 cup shredded mozzarella cheese reduced fat

Topping:

  • 8 oz reduced-fat ricotta cheese
  • 1/3 cup parmesan cheese finely shredded, plus extra to garnish
  • 2 tablespoons fresh parsley chopped, plus extra to garnish
  • 2 tablespoons fresh basil chopped
  • 1 pinch salt to taste

Instructions 

  • Heat olive oil in a large pan or skillet over medium-high heat. Add the ground beef mince and fry, stirring with a wooden spoon to break up any lumps, until thoroughly browned. Season generously with salt and pepper to taste. Once browned, drain any excess fat.
  • In the same pan (or add a little more oil if needed), sauté the diced onion until it softens and becomes translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it. Transfer the browned meat, softened onion, and fragrant garlic to the bowl of a 6-quart (or larger) slow cooker.
  • Add the chopped carrot, chopped zucchini, chicken stock, tomato sauce (Passata), crushed tomatoes, water, tomato paste, fresh parsley, dried basil, dried oregano, and crushed beef bouillon cube to the slow cooker. Stir all the ingredients well to combine. Cover with the lid and cook on high for 4 hours or on low for 8 hours.
  • During the last 30 minutes of the cooking time, add the broken lasagna sheets to the slow cooker. Stir them gently into the hot soup, ensuring they are submerged in the liquid. Cover again and continue to cook until the pasta is al dente (tender but still firm to the bite).
  • Once the pasta is cooked to your liking, turn off the slow cooker heat. Add the shredded mozzarella cheese, gently pressing it into the hot soup to encourage it to melt into gooey deliciousness. Stir until most of the cheese is melted and incorporated.
