Ingredients 

 

Marinade:

  • 1/4 cup olive oil
  • 1/4 cup lemon juice juice of 1 large lemon
  • 1 tablespoon red wine vinegar
  • 1 tablespoon garlic minced, approximately 2 large garlic cloves
  • 2 tablespoons dried oregano plus extra for seasoning
  • 2 teaspoons salt plus extra to taste
  • 1 pinch cracked black pepper to taste
  • 8 chicken thighs bone-in, skin-on or off (skin-on recommended for extra crispiness)

Tray Bake:

  • 17 1/2 oz potatoes about 3-4 medium potatoes, diced into 1-inch pieces for even cooking
  • 1 red onion cut into thick wedges
  • 1 lemon halved, plus extra for serving if desired
  • 4 tablespoons pitted Kalamata olives for garnish and flavor
  • 4 tablespoons feta cheese cubed or crumbled, for serving

Instructions 

  • Prepare the Marinade: In a large, shallow dish or a sturdy resealable bag, combine all the marinade ingredients: olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, salt, and cracked pepper. Whisk or shake well to combine. Add the chicken thighs and turn to ensure they are evenly coated in the marinade. Cover the dish or seal the bag and let it marinate. If you’re short on time, 15 minutes is sufficient, but for optimal flavor, marinate for at least 1 hour or even overnight in the refrigerator. Remember to turn the chicken occasionally to ensure all sides absorb the flavors.
